The Heritage Menu is a contemporary interpretation of 1896 Escoffier classics
Our gastronomic heritage was established by the famous French master chef Auguste Escoffier. Our talented team at Brasserie Ritzcoffier have been truly inspired putting their modern spin on a menu from 31st May 1896. This star event is part of our 150th Anniversary Celebrations. Anticipate Œufs au gratin à la norvégienne with a caviar foam, tender lamb l’espagnol and an irresistible dessert with local honey and Edelweiss chocolate. Diners are invited to travel up to our mountain ridge by Bürgenstock Funicular - in 1888 this pioneering feat of engineering was one of the many innovations that made Bürgenstock Resort "beyond imagination".
