At Verbena, we have refocused on our roots. Christian Scharrer calls it his ‘Home Kitchen’; a space where the ego of fine dining is set aside to make room for the magic of time and place.
We don’t follow fleeting trends here. Instead, we look to the logic of the seasons and the produce of our Green Valley, working with farmers we know by name to let the land dictate our flavours. It is an homage to the food that sustains us: Alpine pike-perch on creamy polenta, fine poularde tucked into puff-pastry pillows and the quiet nostalgia of veal Maultaschen in a fragrant lovage broth. These are instinctive, deeply satisfying flavours that require no translation.
